Cook everything gently, stirring often, until the spices and garlic release their aroma—this should take about 10 minutes. Pour in the reserved cooking liquid and add the bay leaf. Cover the skillet and let it simmer for 20 minutes so the flavors really meld.

Step 3

After that, toss the steamed carrots into the skillet, making sure they’re well coated with the spiced sauce. Let them cook together for a couple of minutes until the carrots are heated through. Finish by squeezing some fresh lemon juice over the top and fish out the bay leaf before serving.
