Step 1

Ad the navy, kidney, and black beans to your Instant Pot along with 6 cups of water. Secure the lid and set it to high pressure for 27 minutes. It might take 10 to 15 minutes for the pressure to build up.

Step 2

While the beans are cooking, heat some olive oil in a large pot over medium-high heat. Toss in the onion, carrots, and celery, and cook until the onion turns translucent, about 5 minutes. Stir in the garlic and cook for another minute until it smells amazing. Sprinkle in the flour and mix everything well so the veggies get coated.

Step 3

Pour in the stock and water, then add the kielbasa, salt, pepper, parsley, basil, thyme, and bay leaf. Bring the mixture to a boil, then turn the heat down and let it simmer gently for about 10 minutes.

Step 4

Once the beans are done, release the pressure naturally according to your Instant Pot’s instructions — this usually takes between 10 and 40 minutes. Drain the beans well.

Step 5

Add the beans and orzo to the stew and bring it back to a boil. Let it cook until the orzo is tender and all the flavors have blended nicely, about 9 minutes. Take the pot off the heat and let it sit for a few minutes before serving.

Serving Inspiration

Serve this stew with crusty bread or over creamy mashed potatoes to soak up the delicious sauce. A simple green salad or roasted vegetables make great side dishes to balance the meal.

Reheating And Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. This stew also freezes well; cool completely before freezing and thaw overnight in the fridge before reheating gently on the stove or in the microwave.
