Step 1
Lightly heat a large pot over medium-high heat. Add the ground beef and cook it, breaking it up with a spoon, until it’s nicely browned and crumbly—this usually takes about 10 to 15 minutes. Once cooked, drain off any excess grease.

Stir in the beer, tomato sauce, diced tomatoes, pinto beans, red beans, kidney beans, both chopped onions, green and red bell peppers, brown sugar, garlic, chili seasoning, cornstarch, and mustard. Give everything a good mix and bring it all to a boil.
Step 3
Once boiling, turn the heat down to low, cover the pot, and let it simmer gently. Make sure to stir it every now and then as it cooks for about an hour, so all those flavors blend together beautifully.
Step 4
When you’re ready to serve, spoon the chili into bowls and top each with a tablespoon of shredded Cheddar cheese, a little chopped onion, and a splash of hot sauce. Don’t forget to season with salt and pepper to taste. Enjoy!
