Gently heat your oven to 400°F (200°C). In a small bowl, mix together garlic powder, paprika, mustard, parsley, salt, and pepper. Rub each chicken breast all over with olive oil, then coat them evenly with the spice mix. Arrange the chicken on a baking sheet and put a tablespoon of butter on top of each piece. Cover each breast with a piece of parchment paper, folding the edges underneath to make a little sealed pouch. Pop the chicken in the oven and bake for about 35 minutes, or until it’s cooked through and the juices run clear.
