Step 1

Blend the curry powder, ginger, garlic, red pepper flakes, salt, pepper, and thyme in a large bowl. Add the chicken and toss it around until it’s fully coated with the spices. Cover the bowl and let it marinate in the fridge for at least two hours—longer if you have the time.

When you’re ready to cook, preheat your oven to 400°F (200°C). In another big bowl, combine the rice, mango, chopped onion, garlic, and ginger. Transfer the rice mixture to a casserole dish and spread it out evenly. Lay the marinated chicken pieces on top, then pour the coconut milk over everything. Cover the dish tightly with aluminum foil.
