Move your oven rack so it’s about 6 inches from the broiler and then preheat the broiler. Place the bread slices on a baking sheet and pop them under the broiler for about 1 to 2 minutes until they’re nicely toasted—just keep an eye on them so they don’t burn. While the bread is toasting, mash up the avocados and mix in some chopped red onion and fresh cilantro. Once the bread is toasted, spread the avocado mixture on top and sprinkle a generous amount of Parmesan cheese over it. Put the baking sheet back under the broiler for another 2 to 3 minutes, just until the cheese melts and gets a little bubbly. Then, it’s ready to enjoy!
