Step 1

Lightly heat some olive oil in a large skillet over medium heat. Add the onions and chipotle peppers, cooking them until the onions turn soft and translucent, which should take about 10 minutes. To the slow cooker, add the crushed tomatoes, Italian-style diced tomatoes, beer, garlic powder, kosher salt, black pepper, cumin, chili powder, paprika, and brown sugar. Give everything a good stir so the flavors blend well.

Take a small piece of cheesecloth and tie the cinnamon sticks and cloves inside to make a little spice bundle. Drop this into the slow cooker, cover, and set it to low. Let it cook gently for 6 to 8 hours to develop all those rich flavors.
